Snowflakes

cookies

Medium sized flour tortillas
Butter
2 rounded teaspoons sugar
¼ teaspoon sugar

Preheat oven to 350 degrees. Melt desired amount of butter in a pan over low heat, or in the microwave. Combine sugar and cinnamon and set aside. Use cookie cutters to cut out snowflake shapes with the flour tortillas and place on a cookie sheet. Brush each “snowflake” with melted butter and sprinkle with the cinnamon/sugar mixture. Bake for 10 minutes. Cool and enjoy!

Soft Gingerbread

cookies

½ cup shortening
½ cup sugar
½ cup molasses
1 egg
1 TBSP white vinegar
2 ½ cups flour

Powdered sugar icing:  Mix together two cups powdered sugar with ½ tsp. vanilla and water by the tablespoon until it mixes to a desired consistency for icing cookies.  Once spread on to cookies, top with assorted nonpareils, colored sugars, and other decorative candies.  The icing makes for great glue!

Yields: 12 to 18 cookies

Hot Chocolate

with a cinnamon twist

4 cups whole milk
2 tablespoons sugar
2 tablespoons unsweetened cocoa
2 tablespoons chopped semisweet chocolate or semisweet chocolate chips

Over medium heat, begin heating the milk. While heating, whisk in the sugar, cocoa, and semisweet chocolate. Continuously stir the mixture until all of the ingredients are melted and the mixture is hot (but not boiling).

Top with marshmallows, and stir with a cinnamon or added flavor!

Yields: 2 servings

Cream Cheese

Short Bread Cut Outs

1 package (8 ounces) cream cheese, softened
1 cup (2 sticks) unsalted butter, softened
2/3 cup sugar
½  teaspoon vanilla
2 cups flour

Powdered sugar icing and decorative sugars/sprinkles

  1. Using a mixer, beat cream cheese, butter, sugar, and vanilla until well blended. Mix in flour until just combined. Refrigerate several hours or overnight.
  2. Preheat oven to 350 degrees. Roll dough to ¼ inch thickness on lightly floured surface. Cut into desired shapes. Place on parchment covered cookie sheets.
  3. Bake for 12 to 15 minutes or until edges are lightly browned. Cool and decorate as desired using powdered sugar glaze, colored sugars, and sprinkles.
